Lohikeitto (Finnish Creamy Salmon Soup)

A comforting Finnish classic: tender salmon and potatoes simmered in a light cream broth, finished with plenty of fresh dill.

Ingredients
  

  • 500 g salmon fillet skinless, cut into cubes
  • 1 leek sliced
  • 1 tbsp butter
  • 700 ml water or light fish stock
  • 4 medium potatoes peeled and diced
  • 1 carrot diced
  • 2 allspice berries optional
  • 200 ml cream
  • 1 handful fresh dill chopped
  • Salt and white pepper to taste

Method
 

  1. Melt the butter in a pot and gently soften the leek without browning.
  2. Add the water or stock, potatoes, carrot, and allspice. Simmer 12-15 minutes until the potatoes are almost tender.
  3. Stir in the cream and bring to a gentle simmer.
  4. Add the salmon cubes and simmer very gently 4-5 minutes, until just cooked through; do not boil hard.
  5. Season with salt and white pepper. Remove from heat and stir in most of the dill; let rest a few minutes.
  6. Serve hot, topped with the remaining dill, with rye bread on the side.
