Lohikeitto (Finnish Creamy Salmon Soup)
A comforting Finnish classic: tender salmon and potatoes simmered in a light cream broth, finished with plenty of fresh dill.

- Melt the butter in a pot and gently soften the leek without browning.
- Add the water or stock, potatoes, carrot, and allspice. Simmer 12-15 minutes until the potatoes are almost tender.
- Stir in the cream and bring to a gentle simmer.
- Add the salmon cubes and simmer very gently 4-5 minutes, until just cooked through; do not boil hard.
- Season with salt and white pepper. Remove from heat and stir in most of the dill; let rest a few minutes.
- Serve hot, topped with the remaining dill, with rye bread on the side.
